Weekly Meal Plan

This week's dinner plan includes 2 crock pot meals.  I really love my crock pot and I should use it more often.  I have seen several websites out there where you prepare your meals in advance, freeze them and use them throughout the month.  I need to do that.   Check out www.savingyoudinero.com.  She has 25 meals you can prepare and freeze.  I look forward to doing this especially with the summer months coming.  I can spend more time outside and at the pool instead of fixing dinner.

My dinner plan this week:

Chicken and Artichoke Linguine
Sloppy Joes
Clam Chowder
Smothered Round Steak with BBQ Onions
Cranberry Chicken in the Crock Pot
Homemade Pizza
Pot Roast in the Crock Pot

Keep an eye out for the recipes.  I will try to post pictures (if I remember to take them). 

Tonight's Dinner served with a side salad. 

Chicken and Artichoke Linguine

8 ounces linguine
3 Tablespoons butter
1/4 cup extra virgin olive oil
3 green onions, chopped with green portion reserved
3 garlic cloves, minced
1 - 14 oz can extra small artichoke hearts, well drained and chopped
2 cups cooked chicken
1/2 pound bacon, cooked crisp and crumbled
1 Tablespoon dried or fresh basil
1/2 cup grated Parmesan cheese

Cook linguine according to package directions and drain. 

Meanwhile, heat butter and olive oil in a large skillet.  Add white portion of the green onion and garlic.  Saute until tender.

Add chopped artichoke hearts, chicken and bacon.  Simmer on low until ingredients are heated.  When almost ready to serve, add basil.

Remove from heat.  Add drained linguine, Parmesan cheese and the green portion of the onions.  Toss well and serve.

Serves 4 to 6.

I try to make something "fancy" on Sundays.  The artichoke were a little on the expensive side but I really wanted to try this dish.  I hope the family likes it.  I will post a picture tonight.  Please leave me a comment if you try this dish.
