What a miserable day? Cold and Rainy! I know it's April and April should bring showers but why is it so cold? The pool opens in a month. It's going to take more than a month to warm up. Hopefully this is the last of the cool weather. I won't hold my breath. C'mon Summer.
Tonight's dinner is homemade Sloppy Joes. Not my family's favorite but mine. Yes I love Sloppy Joes. The sloppier the better. I have to say this recipe is easy and good. It's so easy, my husband is actually making it. Serve it with french fries and a vegetable and dinner is served.
Sloppy Joes
1 lb. ground beef
1 onion, finely diced
1/2 teaspoon salt
3/4 cup ketchup
1 Tablespoon vinegar
1 teaspoon sugar
1 Tablespoon mustard
In a large skillet, brown the ground beef and onions. Keep browning until well browned and no liquid remains. Add remaining ingredients and simmer 30 minutes. Serve on hamburger buns.

Every month I am responsible for creating the preschool bulletin boards. This month one of the boards was a Rainbow Hair poem. The kids love "singing" it over and over. It was a great way to label colors. I had my class go a step further and create rainbow names. I wrote their names on a large sheet of white paper. They traced the letters with glue and placed 1" squares in the rainbow color order on the letters. They really turned out cute.
